Spinach Omelette Recipe

5-6 egg whites, beaten
1 egg yolk, beaten w/ other whites
1-2 handfuls of fresh spinach
Optional: cheese of your choice, pepper
Using a stove top, heat a non-stick pan with a light coat of extra virgin olive oil in it at a medium to medium-high heat. Add the egg mixture, wait until eggs have almost completely solidified (about 5-10min), then add spinach to one side of the pan. Lifting the other side, fold the egg over onto the spinach, forming a half-circle. Cook for a few moments, then flip. Add cheese either inside or on top of the omelette if you so desire (skip if you are watching your fat or calorie intake). Enjoy!
